The Climb
Christopher Haatuft's early kitchen work moved through the kind of posts that build timing, pressure tolerance, and basic service discipline before any stylistic claim can hold weight. A start in 2001 as chef at a bar/restaurant, followed by an apprenticeship program, gave him the repetition and exactitude that shape working habits. Work as chef at restaurants in Bergen, Norway, then anchored that foundation in the city that would remain a reference point in his cooking. A later post as head chef at Norwegian Embassy in Paris, France, widened the frame. That role asked for control, consistency, and the ability to make decisions hold under scrutiny. Taken together, these positions show a career built through successive rooms and different expectations, with each step adding to the technical and editorial discipline behind his work. Today, Christopher Haatuft carries that accumulation into Lysverket, where chef and ownership have been aligned since 2013, alongside his role as advisor of Astanor.
Today
Neo-Fjordic cuisine is the label that defines the kitchen at Lysverket, and it is built from place rather than from abstraction. In Christopher Haatuft's case, the work reads as a direct response to Norway's coastline, northern waters, and the conditions that shape what can be cooked there. The result is a cuisine that keeps geography at the center of the plate instead of treating it as context. "Norway has the largest coastline in the world, and we’re in a small, rugged area of that world—with a specific landscape. I wanted to do something that was because of that place." That line sets out the operating principle plainly: food as a function of place, not decoration around it. It also clarifies why the earlier posts matter. The bar/restaurant floor, the apprenticeship program, the Bergen kitchens, and the Paris embassy role all feed into the same current at Lysverket, where the work now has a stable address and a defined vocabulary.
In Their Words “Norway has the largest coastline in the world, and we’re in a small, rugged area of that world—with a specific landscape. I wanted to do something that was because of that place.” “So this little ball of depressing represents the past of Norwegian food.”
