The Climb
Distilling for Codie Palmer started before a title, before a site, before the first professional role in spirits. On the edge of a small remote town in the Pilbara, northwest of Western Australia, distance, hard work and self-reliance set the pace. By his own account, the practice was already underway in adolescence: “I’ve actually been distilling on and off since I was 15 years old.” That kind of start does not produce shortcuts. It builds repetition, patience and a feel for process that has to be earned. The technical side of the work was shaped first outside spirits. Palmer began as an instrumentation electrician apprentice at Rio Tinto in Pilbara, Western Australia, then moved into a supervisor role at the world-class iron ore export ports at Rio Tinto, and later worked as operator/maintainer at a large power station in Perth, Western Australia. Those roles were built on systems, machinery and accountability. In distilling terms, that background matters: it trains the eye for control, consistency and the discipline required to carry raw material through to a finished bottle. The craft itself came through a kitchen route. While working as a kitchen hand through high school in the Pilbara, Palmer was shown the artform by a chef. From there, the work moved from observation to practice. “I soon began exploring the artform myself and before I knew it my entire house was full of hobby brewing and distillation equipment.” The progression is plain enough: curiosity, then repetition, then a domestic setup that left little doubt about where the focus had shifted. By 2015, that side practice had become the centre of the work. Since then, Codie Palmer has been founder and managing director / head distiller of Illegal Tender Rum Co, and the role has joined leadership to production rather than separating them. In distilling, that means the person guiding the business is also tied to the daily decisions of the still and the standards that hold the house style together. “I have never looked back.”

At Illegal Tender Rum Co in Dongara, Australia, Palmer has served as managing director / head distiller since 2015, and the role sits across both operations and production. That combination matters in a distillery: it keeps the maker close to the process, from pace and sequencing to the standards that define each release.
