i. Biography
Today
Atlanta shaped Cody Taylor’s cookery from the start, and the city’s range shows up in the way he works: direct, adaptable, and attentive to repetition. Culinary school in Atlanta gave him the basics of technique and discipline. An internship at fine dining restaurant in Atlanta put him inside the pace of professional service, where precision and consistency matter as much as taste. From there, the line moved to sous chef at fine dining restaurant in Atlanta, where control and creativity had to sit together on the line. Taylor’s approach has been built on that kind of balance: not chasing effect for its own sake, but watching how one flavor supports another and how a plate holds together in service. Since 2010, he has been chef/owner of Heirloom Market BBQ, and the work there reflects the same logic. The name suggests continuity, and Taylor’s cooking does too: measured, specific, and rooted in keeping distinct traditions clear while letting them share space.
Signature
Spicy Korean pork, spare ribs, and kimchi coleslaw define Cody Taylor’s table. The set tells you what the kitchen values: heat handled with control, smoke given time, and a sharp, cooling counterpoint on the side. Each dish does one job clearly, and together they build a plate with range. That arrangement points to Taylor’s larger method. Smoke and spice are allowed to stay present. Richness is checked by acidity. Tender meat is paired with crunch. The point is not to blend everything into one note, but to let contrast do the work.
In Their Words “To be clear, this isn't fusion. Each culture is respected for what it brings to the table individually.” That line sets out the frame for the kitchen. The ingredients and methods are not flattened into something generic. They are kept legible, and the respect is in the way they are handled side by side. “I saw a lot of correlation. I'm like, this would go really good with smoked meat.” That is the practical start of the work: seeing where one tradition can sit against another without losing its shape. For Taylor, the idea begins with fit and ends with smoke, seasoning, and structure doing their part.
