    i. Biography

    The Climb

Formal culinary schooling put technique before performance. At the Ferrandi School of Culinary Arts in 1981, Colin Field entered the trade through kitchen discipline: flavor, sequence, and repeatable method rather than bar myth. Hotel bar work tightened that foundation into service. As Assistant Head Bartender at the Hotel Scribe, Colin Field worked inside a format where classic technique, speed, and guest reading had to hold together across a room, not just inside a glass.

The palace bar became the long-form test of that method. In 1994, Colin Field became Head Bartender at Bar Hemingway within the Ritz Paris, holding the post until 2023. Nearly three decades in one bar gave the work continuity: house style, regular clientele, and a cocktail program built through repetition, adjustment, and control. Consulting and guest bartending shifted the practice from a single station to a broader application. In 2023, Colin Field moved into work as a consultant and Permanent Guest Bartender at Maison Proust, carrying the same bar discipline into a different room.

    At Work Now

Consulting work depends on translation: taking a bartender’s standards and making them usable by another operation. Since 2023, Colin Field has worked as a consultant, with Maison Proust in Paris serving as a current site for that practice through his role as Permanent Guest Bartender. Large Paris rooms require cocktails that can survive scale without losing identity. Colin Field also brings his style to the Grand Café at the Grand Palais in Paris, extending the same service language beyond Maison Proust.

    Signature

Signature cocktails include Clear Dry Dirty Martini and Serendipity.

    Peer Recognition

Trade recognition followed sustained bar practice rather than a single season. In 2011, Colin Field was honored with the title of World's Best Bartender, placing his work within the international bartending conversation and confirming the reach of a career built through hotel bars, signature drinks, consulting, and long service at Bar Hemingway.
