i. Biography
Distillery President and senior distiller at Mendocino Spirits / Tamar Distillery in Redwood Valley, Crispin Cain came into the trade through winery labor in 1983 and stayed close to fermentation, distillation, and the disciplined work of production ever since. The route runs through Pleasanton, Mendocino County, and Redwood Valley, with wine establishing the habits and technical attention that still shape the work.
The Path
At Villa Armando Winery in Livermore, California (1983–1985), the work was cellar-based and production-driven, a practical start that grounded Crispin Cain in the pace and demands of the trade. He then moved through Hidden Cellars Winery in Mendocino County, California (1986–1989), Duncan Peak (1986–1989), Parson’s Creek (1986–1989), and Jepson (1986–1989), building a record that reflected both hands-on experience and an understanding of how the work holds together. Since 1989, Crispin has been at Germain Robin, where that base in wine expanded into a long career in spirits. Today, he is also proprietor of Greenway Distillers, proprietor of American Craft Whiskey distillery, and Distillery President and senior distiller of Mendocino Spirits / Tamar Distillery. Seen as a whole, the arc is steady: winery labor, deeper technical responsibility, then leadership. Each step widened the scope without breaking the line back to fermentation and cellar work.
The Work Today
The present work sits at the intersection of classical alchemy and finished spirits, with rose petals, apple brandy, and absinthe among the materials named in Crispin Cain’s practice. The emphasis is on process as much as product: the materials, the sequence, and the control required to move from raw input to a finished spirit with clear character. The link to wine remains active. The cellar background carries into distilling, and the discipline of fermentation still informs the way the work is handled.
Signature
Crispin's signature wines include Low Gap Whiskey, Russell Henry Gin, Fluid Dynamics Cocktails, and DSP 162 Vodkas. These names cover whiskey, gin, cocktails, and vodka, and together they show a range built on the same questions of balance, material, and method.
In Their Words “Winemaking informs my fermentation practices to this very day.”
Acclaim
The dates mark the scale of the career: 1983 at Villa Armando Winery, the 1985 move into Mendocino County, the 1987–1989 years at Mendocino College, and the 1989 turn toward distillation with Hubert Germain-Robin. The path runs from bottling line to cellar, from winery work to assistant distilling, and then into senior distilling and executive leadership. The accumulation is the point: skills gathered over time, and kept in use. In Redwood Valley at Mendocino Spirits / Tamar Distillery, Crispin Cain’s leadership sits within Mendocino Spirits and American craft distilling, with wine continuing to shape the precision and temperament of the work.
