The Climb
Chicago kitchens set the terms for Dan Weiland’s early work: pace, precision, and the expectation that every plate carry a clear point of view.
Today
At About Last Knife, Weiland’s current focus is the pairing of food with the brewery’s botanical beers. That pairing is a matter of balance as much as style, asking the plate to meet the glass without forcing either one to dominate. He also works as Executive Chef at About Last Knife in Chicago, a setting where the food has to function as part of the restaurant’s larger logic, not as a standalone gesture. His approach starts with the familiar and works from there. Instead of chasing novelty, Weiland returns to classic dishes and rebuilds them with technique, philosophy, sustainability, and creativity in that order. “I like to take a classic dish and create my own version based on technique, philosophy, sustainability, and creativity.” In that framework, invention is disciplined: technique establishes control, philosophy sets the direction, sustainability keeps the work accountable, and creativity arrives last, not as decoration but as the final decision.
In Their Words “The first thing modern restaurants often lose sight of is that the food and the menus have to make sense – there has to be synergy and a strong connection to the rest of the restaurant.” “I like to take a classic dish and create my own version based on technique, philosophy, sustainability, and creativity.”
Recognition
The work gets recognized for how tightly it holds to purpose: vegetables treated with the same seriousness often reserved for meat, classic dishes rebuilt through technique, and menus judged by whether they belong in the room they serve. In Weiland’s hands, vegetables are handled with intent rather than as support material. Familiar dishes are not left intact or dressed up; they are reworked from the inside, with structure clarified and function sharpened. The career is rooted in Chicago, but the question at the center of it is one any working chef knows: does the dish belong here?
