Dani López is the chef and owner of Kokotxa in San Sebastián’s Parte Vieja (Old Town), where he runs contemporary Basque cuisine with Estela Velasco in front of house. He is the kitchen lead behind the restaurant’s market-driven, tradition-rooted cooking.
