Food Science in a working kitchen depends on more than equipment; it requires a way to test claims, translate results, and make technique usable at service speed. Dave Arnold’s background at Yale University and Columbia University School of the Arts placed philosophy and Performance Sculpture before professional Culinary Technology, giving his later work a structure built around inquiry, demonstration, and applied making rather than inherited kitchen hierarchy.
Training and Lineage
Analytical training and material practice both shaped the way food questions were handled in Arnold’s early work.
