The Climb
Joe Beef’s identity was built on scale, appetite, and a room that made no apology for either, and David McMillan was part of that construction from 2005 to 2021 as co-founder and co-owner in Montreal, Canada. The restaurant drew on Martin Picard at Au Pied de Cochon, on the grandiose bistros of Paris, on seafood towers, and on excess; that lineage was not decorative, but structural. Over those years, the work was less about invention in isolation than about sustaining a house style with force: generous plates, deliberate hospitality, and a dining room calibrated for a memorable night before service even settled in.
Today
Hospitality at Joe Beef was measured against a standard McMillan stated plainly: “I was and still am very insecure about anybody coming to the restaurant and not having a spectacular meal.” That insecurity reads as discipline in service of the plate, a refusal to let the room outrun the cooking. The ambition behind it is equally direct: “I want people to drink and eat to excess.” In that sentence, the shape of the dining room is clear—abundance as method, not accident, with the experience built to carry appetite all the way through.
