The Climb
Training, repetition, and early kitchen pressure shaped Debbie Gold’s path. She studied at the University of Illinois before moving into Charlie Trotter’s in Chicago, where the pace and exacting standards helped set the terms of her early work. From there, Chicago’s Tied House became part of that foundation, with Gold serving as chef from 2018 and bringing the steadiness that comes from long hours spent learning how to keep a kitchen controlled and consistent. Since 2018, Gold has also been chef at Schubas in Chicago, extending that same grounded approach into another corner of the city’s dining scene. The throughline in her career is not noise but accumulation: one Chicago room after another, each adding another layer to the practical command she brings to the line.
Today
Seasonal ingredients and bold flavors anchor Gold’s current cooking, with a rooftop dining setting giving the work a clear sense of place. The menu and the room work in tandem: produce leads the plate, while the view above the city frames the meal with a sense of openness. Gold’s signature dishes show a cook working across strong seasoning, lighter structure, and ingredient use with intent.
