    The bar trade is built in layers: floor speed, group standards, brand fluency, hotel discipline, then production leadership. In Declan McGurk’s case, that sequence runs through Trio Bar and Grill, Arc Inspirations LLP, Speciality Brands, and The Savoy, with awards registering the work at each stage.

    The Climb

    Bar training in Leeds came through service rather than theory after University of Leeds, with Declan McGurk working as Bar Manager at Trio Bar and Grill in Leeds from 2003. That kind of room teaches the working fundamentals: pace, guest-reading, station discipline, and the difference between service that needs ceremony and service that needs speed. Bar development at Arc Inspirations LLP moved the work from a single counter to the systems behind multiple services. In that role, McGurk’s remit widened into standards, structure, and the decisions that let a bar carry an identity beyond one night’s shift. Brand and sales roles at Speciality Brands in London placed the trade conversation on the supply side. Spirits knowledge, venue needs, guest behaviour, and market language had to line up; the operational habits formed in Leeds were joined by commercial fluency. Hotel-bar practice at The American Bar at The Savoy in London required a different form of discipline when McGurk became Bar Manager in 2013, later rising to director of bars at The American Bar at The Savoy in London. The room carried historic weight, but the work remained practical: maintain standards, protect continuity, and keep the bar current. Under McGurk’s stewardship, the American Bar was named World's Best Bar in 2017. Today, Declan is Managing Director of The Boatyard Distillery.

    Today

    Distillery leadership followed bar operations, brand work, and hotel-bar direction; McGurk also served as Commercial Director at the distillery in 2020. The move keeps the same trade concerns in view: liquid, team, service, market, and place all have to hold together. The professional line is a widening of responsibility rather than a change of craft category: a Leeds bar floor, group development, spirits brand work, a London hotel-bar directorship, and now a distillery in Ireland. His description of the Savoy years states the balance directly: “We are always a classic historic hotel bar. But at the same time we need to very much look forward.” That balance is the useful read on McGurk’s work. The craft question is not whether to keep heritage or discard it; it is how to operate with enough respect for what a room has inherited, and enough pressure on what the next service requires.
