A service ethic showed up early in Denise Cerreta’s work before it reached the dining room. As owner and operator of an acupuncture clinic in Salt Lake City, Utah, until 2003, she worked in a setting built around care, listening, and healing. In 2003, that same orientation moved into food when she became owner and chef of One World Cafe, where the plate carried more than a transaction. By 2006, she had widened the model again as founder of One World Everybody Eats, carrying the principles developed in Salt Lake City into a broader framework.

Where They Are Now

At One World Cafe in Salt Lake City, Utah, and through One World Everybody Eats in Salt Lake City, Denise Cerreta has kept the work tied to a simple operating idea: “Let people price their own food.” The line is direct, but the structure behind it is broader—trust at the counter, dignity in the exchange, and access treated as part of service. In her practice, the meal is not only nourishment; it is also an invitation to agency, with the restaurant set up to meet people as participants rather than pass-through customers.

In Their Words “I have always been trying to help people, and I made a commitment in my early 20s to follow my spiritual path.” That commitment helps explain why her work moves between healing, hospitality, and advocacy without changing its center. The throughline is visible in the choices she made and the way she describes them: plain, purposeful, and keyed to public need. Cerreta has also put the scale of the problem into stark terms: “If everybody in the country gave me a dollar, I could eliminate hunger.” The force of that line is in its arithmetic. She places hunger within collective responsibility and keeps the answer grounded in action rather than abstraction.
