A service ethic showed up early in Denise Cerreta’s work before it reached the dining room. As owner and operator of an acupuncture clinic in Salt Lake City, Utah, until 2003, she worked in a setting built around care, listening, and healing. In 2003, that same orientation moved into food when she became owner and chef of One World Cafe, where the plate carried more than a transaction. By 2006, she had widened the model again as founder of One World Everybody Eats, carrying the principles developed in Salt Lake City into a broader framework.
