i. Biography
Didier Clément is a French chef and co-proprietor of the Michelin-starred restaurant at the Grand Hôtel du Lion d'Or in Romorantin-Lanthenay, Sologne. After completing an apprenticeship under Jean Guinot in Limoges and working at prestigious establishments including Taillevent, Pavillon Ledoyen, and L'Oasis, he took over the kitchens at Le Lion d'Or in 1980. for his botanical cooking and research into ancient spices and forgotten herbs, he creates contemporary French haute cuisine deeply rooted in the Sologne terroir.
