Dima Habibeh is the chef and owner of Ammatolí in downtown Long Beach, California, where she creates Levantine cuisine inspired by her Palestinian, Syrian, and Jordanian heritage. She the restaurant is her ode to Eastern Mediterranean culinary traditions, and the restaurant’s press page notes that she led it to a 2024 James Beard Awards semifinalist recognition for Best Chef: California.
