His cooking is organized around local ingredients, Filipino flavors, and a continuing search for what the pantry still holds. Don Patrick Baldosano works from that set of convictions without ornament: familiar tastes are treated as material for further testing, and forgotten ways of cooking are treated as resources rather than nostalgia. In his own words, the work is plainspoken: “I don’t like music, nor do I enjoy playing any sport. What interests me is searching for new flavors and forgotten ways to cook. My life revolves around food.”
The Path
Technique and instinct began to take shape at Enderun, where Don Patrick Baldosano laid down the foundations of his culinary voice.
