Duncan Holmes is Executive Chef of Beckon in Denver, where seasonal tasting menus set the pace of the room. The format demands a kitchen that can work in sequence without losing sight of the table, and Holmes uses it to turn service into a structured exchange rather than a simple send-out. His own framing is direct: “I think what drew me to becoming a chef is the hospitality element of it, so really, a real way of connecting with people.” At Beckon, that idea shows up in the way the restaurant moves course by course.
The Climb
Training at Chico State College gave Holmes the starting point for a career built through repetition in demanding kitchens. He began as Line Cook at Eccolo in Berkeley, California, then moved through Line Cook positions at La Toque in Napa, California, and Auberge Du Soleil in Napa, California. Each stop added another layer of discipline to a resume shaped by the line: timing, precision, and the ability to keep pace without losing control. International staging work widened that range. Holmes served as Staging Chef at A.O.C. in Denmark, Staging Chef at Geranium in Stockholm, Sweden, and Staging Chef at Mathias Dahlgren in Stockholm, Sweden. The sequence matters: each kitchen added a different point of reference, building fluency through exposure to different standards, rhythms, and expectations. At Sons & Daughters in San Francisco, California, Holmes moved from Line Cook to Head Chef, a progression that reflects both technical readiness and the ability to read a kitchen from the inside. The same room, taken in a different role, often reveals whether a cook can do more than execute; in this case, it marked Holmes as someone able to absorb the working shape of a restaurant and help define it.
