Dylan Watson-Brawn

Dylan Watson-Brawn is a Canadian chef from Vancouver who trained in Japan and Europe before establishing his name in Berlin. He co-founded Ernst in Berlin in 2014, which opened in 2017 and later earned a Michelin star, and he was named Germany’s Chef of the Year. In 2024, he opened Ernst Cave in Berlin, described as a wine bar and restaurant with Berlin’s first sake brewery and a tsukemono bar.
