Edgar Chavez

Edgar Chávez is the Executive Chef at Rosewood Mayakoba in the Riviera Maya, a role he has held since November 2022. Rosewood identifies him as a native of Mexico City and a graduate of Le Cordon Bleu, and says he leads the resort’s culinary program with a focus on Mexican regional flavors, pre-Hispanic techniques, and sustainable sourcing. He is also noted by Rosewood as an ambassador for Come Pesca and as a leader in the resort’s ocean-sustainability programming.
