The aim is to let the vineyard read cleanly in the glass, with the structure and finish that dryness can carry when it is handled with intent. That same logic carries through another of Wallrapp’s own terms for the work: "Our goal is to find the grape's expression and fruit in the glass again." For a winemaker, that is a useful brief.
