i. Biography
Ellen Xu 徐子画 is the bartender and founder of Chimney, a neighborhood cocktail bar she opened in Hangzhou in 2019. She is also described as the owner-bartender of Chimney, and the bar was recognized as an award-winning venue in Hangzhou; Xu won Woodford Reserve’s The Wonderful Race cocktail competition in 2024.
