Training at University of New Hampshire and Glion Institute of Higher Education gave Elliot Bell the academic and hospitality footing that preceded his time at The French Laundry, where he served as Executive Sous Chef. That sequence matters: classroom preparation, service training, then the demands of one of the field’s most closely watched kitchens. The result is a style shaped by structure, repetition, and the pressure of working at a very high level. Since 2023, Elliot has split his time between Charlie’s, where he is chef and owner, and Bistrot Blaise, where he is Executive Chef.
