From 2013, he was in charge of winemaking at the vineyards at Foradori in Trentino-Alto Adige, Italy, a role that placed him inside a house organized around land, season, and the handling of fruit. The work stays close to the material facts: vineyard observation, cellar attention, and the slow shaping of wine through repeated physical labor.

Where They Are Now

Since 2013, winemaking and culture at Foradori have sat within Zierock’s remit. In trade terms, that means both the material work of the wine and the atmosphere around it have been part of his brief. Movement is one of the basic conditions of wine, and Zierock returns to that in his own account: “It always moves and changes in the glass.” That outlook puts the focus on wines that continue to develop after pouring, rather than on something fixed at bottling. His stated interest in whole grapes and the integrity of fruit follows the same line, keeping the raw material legible in the finished wine. In that frame, the cellar works less as a site of masking than as a place where vineyard character can be carried through with clarity.

Gzon is named among Emilio Zierock’s signature wines. Within the Foradori body of work, it reads as a clear marker of the approach associated with his winemaking: fruit kept present, texture held in view, and a finished wine allowed room to change over time.

In Their Words “Over the years I discovered the integrity of the fruit. Trying to ferment whole grapes and convey their message in a glass of wine is what keeps me curious year after year.” The remark points directly to the method: whole grapes, fermentation, and a steady effort to preserve what the fruit can communicate. It is a description of practice as much as outlook, with curiosity tied to repeated attention to what each vintage gives. “After my degree in philosophy, I understood that I am a person who needs to touch the fruit of his work with my own hands.” That line keeps the emphasis on touch and contact.
