The Path
Boston University is the starting point, but the useful education in Eric Bolyard’s case came from kitchens that demanded clean timing, discipline, and a steady hand. The path runs from Long Island to Spain’s Basque region, then on to London, Venice, and New York, with each stop adding another mode of service and another way to think about flavor. Kitchen A Bistro in Long Island was the first chef post in the record, followed in 2010 by Asador Etxebarri in Spain’s Basque region. From there came St. John Bread & Wine in London, El Coq in Venice, and Eleven Madison Park in New York, a sequence that widened the range of work without losing focus on precision. By 2014, Bolyard had moved into co-founding Tasting Society in Brooklyn as chef, then in 2015 co-founded Black & Bolyard. That same year he began as head chef at Compagnie des Vins Surnaturels in New York, where he remains. He also serves as curator of humblED Whole Farm Dinners, a role that extends the work beyond one dining room.
The Work Today
At Compagnie des Vins Surnaturels, the food program is built on restraint. Since 2015, Bolyard has led the kitchen side of the New York operation, and he has described it in plain terms: “The food program at Compagnie is very minimal right now.” The statement tells you the standard he is working within: less noise, more control, and no interest in overbuilding the plate for its own sake. That same practical register appears in his response to format and service constraints. It is a direct answer, and it points to a dining room whose work does not translate neatly outside its own setting. The kitchen, in other words, is calibrated to a specific room, not a generic export model. There is also a clear shift in where the work is felt. “For me, it’s really special. I’m finally getting to meet the people that I’ve never gotten to meet before because I was always in the kitchen and not on the guest-facing side.” For a chef whose experience has largely been built behind the line, that change matters: the craft still runs through the kitchen, but the exchange now includes the room.
Signature
Bolyard’s signature dishes include Braised Octopus, Ricotta Cappelletti, Cured Raw Scallops, Shaved Roots, Yuzu Kosho, Alsatian Braised Pork Shank, Choucroute, Wine Crèpes, and Mustard. Read together, the set shows a cook working in contrasts: braise against brightness, richness against cut, shellfish against root, with seasoning used to sharpen rather than overwhelm.
