The Climb
Pleasant Valley High School was the starting point before Eric Suniga moved into professional kitchens and began building the repetition, pace, and control that define service work. At Ten 01 (2006–2010), he established the base of that progression, learning the daily discipline that turns a kitchen into a system. The next step, as Executive Chef at Seablue in MGM Grand (2011–2012), marked a clear rise in responsibility and reflected a career moving forward through experience rather than shortcut. That progression continued through chef roles at Bouchon in Yountville, California, and Culinary Dropout at Hard Rock Hotel (2012–2013). Each kitchen added another layer of practical experience, with the work shaped by different rooms, different teams, and the same demands of service. Suniga’s path shows steadiness more than spectacle: years of repetition, leadership, and adjustment, accumulated across distinct settings. Head Chef at China Poblano (2013), then Head Chef at Ku Noodle (2014–2016), placed Eric Suniga at the center of daily kitchen rhythm once again. The sequence underscores a career built through movement and adaptation, with each role extending the same core demands of focus, follow-through, and consistency. Taken together, the record traces a chef shaped by service, responsibility, and sustained work across kitchens that required both discipline and range.
Today
At home, Eric Suniga describes a quieter version of the same practice: “When I’m not working, I enjoy eating at home and cooking with my children.” The line points to cooking as something that continues beyond professional service, but in a different register. In the home kitchen, the work is less about timing a rush than about making space for shared meals and daily routine.
In Their Words “When I’m not working, I enjoy eating at home and cooking with my children.”
