The Path
Miniköche is where Fabian Kracht’s foundation was laid: early kitchen training, discipline, and the repetition that turns procedure into instinct. From there, Haus Duden in Baden-Württemberg gave him the next step as Auszubildender Koch, moving from instruction into service. It is a quiet kind of progression, but in kitchen terms it matters: knife work, timing, standards, and the shift from learning about craft to doing it under pressure. The work then crossed into Spain. Fabian later served as Executive Chef at Nardi in Hervás, Spain, extending the same training into a different kitchen context. The move did not replace the German base; it built on it. One side of the path gave structure, the other widened the frame, with Nardi adding another working register to the same craft. Today, Fabian is Head Chef of Mussumer Krug, where those earlier stages come together in a current role built on continuity rather than reinvention. The title marks responsibility, but the substance is in the accumulation: early training, formal apprenticeship, executive leadership, and a present-day kitchen identity shaped by all three.
The Work Today
At Mussumer Krug, Fabian’s work is most clearly visible in oxtail canne. As a named dish, it gives shape to the kind of cooking that values exactness over noise. It reads as deliberate rather than decorative, with enough definition to show how regional cooking can be handled with precision instead of nostalgia. Crispy suckling pig sits alongside it as the other point of reference. Taken together, the two dishes show range through contrast: one with crisp texture, the other with concentrated depth. For Fabian Kracht, the signature is not a single gesture but a pairing that shows how different forms can sit inside one kitchen language. That pairing also reflects the path behind the plate. The grounding from Miniköche and Haus Duden in Baden-Württemberg remains visible in the discipline of the work, while the experience gained at Nardi in Hervás, Spain, broadens the frame. The result is a style that stays anchored in kitchen fundamentals while moving comfortably across borders.
Signature
Fabian's signature dishes include crispy suckling pig and oxtail canne. The contrast between them is the point: one dish pushes toward crispness and immediate texture, the other toward density and focus. Crispy suckling pig gives the plate its direct edge, while oxtail canne carries a more measured weight. Together, they show a kitchen hand that works through control, not excess.
