i. Biography
Fabiola Torres Monfil is a Puebla-born master mezcalera and co-founder/producer-owner of Zinacantán Mezcal in San Diego la Mesa Tochimiltzingo, Puebla. She is coming from four generations of mezcal producers and as leading a sustainability-focused project that regenerates agave ecosystems while making mezcal. She has been dedicated to mezcal full time for about seven years and works alongside co-founder Diana Pinzón Moncada.
