Training at Culinary Institute of America and at Oro (2016) gave Felipe Bronze a technical base and a working point of reference inside his own restaurant. That pairing matters: one school, one service setting, both feeding the same discipline. Since 2010, as chef-owner of Oro, Felipe has had the room to test ideas, strip back habits, and settle on a clearer kitchen language.
Where They Are Now
At Oro, the shift is away from surface and toward structure. Felipe Bronze describes a deliberate recalibration: less emphasis on immediate visual impact, more attention to weight, purpose, and what the plate is doing beyond first glance. In trade terms, it is a change in priorities, not a new aesthetic. What changed was the restaurant’s center of gravity. By returning to the instincts that first defined his cooking, Felipe Bronze brought Oro closer to its roots and made room for a cuisine that carries more intent. The room still reads as Oro, but the work now asks to be read for content as much as for presentation.
In Their Words “In the past, my cuisine had given too much attention to aesthetics, so my mission with the new place was to change the concept.” The line is plainspoken about what was being corrected: a tilt toward appearance that needed to be rebalanced.
