At Les Frères Pourcel in Montpellier, the move to Chef de partie brought more responsibility inside the brigade, where timing, composure, and consistency carry as much weight as technique. That path led to Head Chef at Maison Troisgros, a role that carries technical authority and the responsibility to hold a kitchen’s rhythm.
