Florent Nys is the Chief Winemaker and enologist at Champagne Billecart-Salmon in Mareuil-sur-Aÿ, where he joined the House in 2005 and took over from François Domi as cellar master in 2018. Raised in Mesnil-sur-Oger in the Côte des Blancs, he studied biochemistry and trained at the University of Reims before apprenticing under Domi for many years. He is credited by the House and wine media with helping safeguard Billecart-Salmon’s house style while refining its precision-focused winemaking approach.
