Denis Blée is the director of vineyards and wines at Champagne Billecart-Salmon in Mareuil-sur-Aÿ, where he has spent roughly twenty years overseeing vineyard parcels from pruning and harvest through oak-cask maturation. He is part of Billecart-Salmon’s winemaking leadership alongside chief winemaker Florent Nys.
