Francky Semblat is Chef De Cuisine at The Hong Kong Jockey Club in Hong Kong, a role he has held since 2021. His previous post as Chef De Cuisine at Robuchon au Dôme in Macau placed his work inside a discipline of exacting French technique, station control, and repeatable finish. “Asia is a very important place for me. I lived in Macau for almost half my life and my wife is also from Hong Kong, therefore I spent a lot of time learning about Cantonese food.” Francky has said.
The Path
Classical kitchen formation runs through Lycée Hôtelier de La Rochelle (1989-1994), followed by Commis de Cuisine work at SDGC Sté de Gestion Culinaire (1996–1999), where Francky Semblat entered the system at the base of the brigade. The next stage, Chef de Partie at Restaurant Laurent (1999–2001), kept the emphasis on section discipline before a long Chef De Cuisine chapter in Macau (2001–2015). That line then continued through Asia and Dubai: Executive Chef at L'Atelier de Joël Robuchon Hong Kong (2015–2019), followed by Executive Chef of Al Muntaha, Burj Al Arab at Jumeirah in Dubai (2019–2020). Since 2021, the same technical register has been applied at the club, where Francky is Chef De Cuisine.
The Practice Today
Since 2021, Chef De Cuisine has been the current working post for Semblat at The Hong Kong Jockey Club. The role follows his former leadership role in Macau. The operating standard remains tied to precision in mise en place, consistency across service, and a French framework carried through senior kitchen roles.
