Formal training at Nihonbashi High School gave Fumio Yonezawa the baseline, but the trade itself was learned on the line, where repetition sets standards and speed exposes weak habits. His first kitchen role was as an apprentice / trainee at Italian restaurant in Ebisu, Tokyo, an entry point into a service environment that rewards timing, discipline, and clean execution.
