i. Biography
Gaëtan Morvan is the chef and co-founder of Lait Thym Sel in Angers, where he opened the restaurant in 2017 with Fanny Morvan. He began cooking at age 15, apprenticed at L'Hoirie under Jean-Marie Lepeltier in Angers, and later worked in the kitchens of Michelin-starred chefs including Michel Guérard, Alain Ducasse, Laurent Saudeau, and Alexandre Bourdas before returning to open his own restaurant. Lait Thym Sel earned a Michelin star.
