The Climb
Gearoid Devaney’s work sits at the meeting point of cellar discipline, dining-room service, and the structural demands of wine education. A Master Sommelier who has led Flint Wines, he has built a profile through long practice, exacting standards, and repeated responsibility across service, teaching, judging, and consulting. The technical base came at Château Rahoul in Bordeaux, where Gearoid Devaney studied viticulture and vinification on stage. That training gave him practical grounding in how wine is made before it reaches service, and a working frame for reading what is in the bottle. In London, he started as sommelier at Capital Hotel in 1997, where the task was to work to the pace of a serious dining room and keep service tight under pressure. He later became Head Sommelier there, taking on the added demands of leadership, sequencing, and consistency in fine service. From there, the route ran through restaurants with exacting standards. Gearoid Devaney served as sommelier at Pierre Gagnaire in Paris, then as sommelier at Tom Aikens restaurant in Chelsea, London from 2003. In both settings, the sommelier’s work required interpretation as much as presentation: reading the table, understanding the menu, and shaping selections that suited balance, contrast, and precision. By 2009, Gearoid Devaney had become Master Sommelier at Court of Master Sommeliers from 2009, a marker of standards met over time rather than a single event. Today
Gearoid Devaney is director of Flint Wines, a role he has held since 2010 and the center of his current work.
