The Path
Geoffrey Smeddle trained at Oundle School and University of Southampton before moving into a career shaped by some distinguished kitchens. Today, Geoffrey is Chef Patron of The Peat Inn.
The Work Today
The title is not only about the food leaving the kitchen; it also places him inside the running of the restaurant, the standards of service, and the daily pressure of maintaining a house with his name attached to its decisions. His own words keep the picture close to the practical realities of cooking. "I’m not crazy for handling raw liver or kidneys much but that’s about as close as I get to hating anything." It is a small, human admission from a chef whose career has been built on professional steadiness rather than theatrical declaration. Service remains the clearest thread through the work. The privilege he names is not abstract; it is enacted through the role he has held since 2006, in a specific dining room, in a specific village, over years of repetition.
Signature
Geoffrey's signature dishes include Scotch Beef with bone marrow crust and truffle pomme dauphine, Warm puff pastry tart with goat's cheese, figs, olives and capers, Vietnamese pho soup, Lobster Thermidor, Partridge with Swiss chard, chanterelles, and quince and chestnut.
In Their Words “I’m not crazy for handling raw liver or kidneys much but that’s about as close as I get to hating anything.” “There is no greater privilege than to be of service.”
