Since 2018, he has owned Wine Bar George at Disney Springs in Lake Buena Vista, Florida, United States. The name points to a personal point of view applied to wine service: a defined room, a defined standard, and a hospitality style built from years spent in demanding dining operations.

In Their Words “I’ve studied wine most of my life and always enjoy finding the most interesting wines through annual trips to wine-growing regions all over the world.” The work here is selection as practice: ongoing study, repeated travel, and the discipline of looking for bottles with character rather than settling for the familiar. For George Miliotes, tasting is part research, part sorting, part keeping the category alive by staying in contact with where wine is made. “In 2007 I became a Master Sommelier by passing a series of rigorous examinations that require candidates to identify wines by taste, aroma and sight.” That title comes from a testing structure built on sensory accuracy and repetition. Taste, aroma, and sight are not ornamental skills in this context; they are the criteria that define whether the work holds up.
