Gerardo Vázquez Lugo is a Mexican chef and the executive chef of Nicos in Mexico City’s Clavería neighborhood, where he joined the family restaurant in 1996 after training as an architect. His work is closely tied to preserving regional Mexican recipes and promoting a socially responsible, local-sourcing approach to cuisine.
