Gilles Dudognon is the chef-proprietor of La Chapelle Saint Martin in Nieul, near Limoges in Haute-Vienne, France. Official and industry sources identify him as the chef at La Chapelle Saint Martin and note that he took charge of the kitchens there in 1986, earned his first Michelin star that same year at age 24, and became chef-owner in 1997.
