The 2009 James Beard Award for Outstanding Pastry Chef marked a body of work built in New York kitchens that valued discipline, clean composition, and control. Gina DePalma’s training at The Institute of Culinary Education in 1994, followed by work in the kitchens at Chanterelle and Gramercy Tavern, set the technical base for the pastry program she later shaped at Babbo in New York City. The Path
Gina DePalma trained at The Institute of Culinary Education in 1994, then worked in the kitchen at Chanterelle and in the kitchen at Gramercy Tavern. Those years led to Babbo, where she served as executive Pastry Chef from 1998–2013.
