i. Biography
Giovanni Santini is a chef at Dal Pescatore Santini in Runate, Canneto sull'Oglio, Lombardy, where he works alongside his mother, Nadia Santini, in the kitchen. Relais & Châteaux says he studied Food Sciences at university before joining the restaurant, and Euro-Toques Italia notes that he has been part of the kitchen since 2000. He was awarded the Prix du Chef de l’Avenir by the Académie Internationale de la Cuisine in 2012.
