i. Biography
Gísli Matthías Auðunsson (widely known as Gísli Matt) is an Icelandic chef, restaurateur, and author who co-founded the seasonal restaurant Slippurinn in Vestmannaeyjar in 2012. In Reykjavík, he co-founded Matur og Drykkur in 2015 to revive heritage preservation techniques and later established SKÁL!. His culinary ventures also include Skáli in Normandy, NÆS in Vestmannaeyjar, and Ylja at Laugarás Lagoon.
