i. Biography
Gísli Matthías Auðunsson (widely known as Gísli Matt) is an Icelandic chef, restaurateur, and author who co-founded the seasonal restaurant Slippurinn in Vestmannaeyjar in 2012. In Reykjavík, he co-founded Matur og Drykkur in 2015 to revive heritage preservation techniques and later established SKÁL!, which earned a Michelin Bib Gourmand. His culinary ventures also include Skáli in Normandy, NÆS in Vestmannaeyjar, and Ylja at Laugarás Lagoon.
