i. Biography
Today
At Kendall College, then in the kitchens at Daniel in New York City and Everest in Chicago, Greg Lutes built the technical base that later carried into his own work. The sequence is familiar enough in the trade: school, then high-pressure restaurants, then the slow use of those lessons in a voice that is not borrowed. What matters in that run is accumulation—standards, timing, discipline, and a sharper read on what kind of cook he wanted to be. The Kinfolk pop-up series in San Francisco gave that voice a flexible format. Pop-up work demands precision and improvisation in equal measure, and that is where his approach lands: deliberate, responsive, and built around the sequence of a room, a plate, and a table. At 3rd Cousin in San Francisco, Greg Lutes is owner/chef, which means the restaurant’s direction runs through his hand at both the kitchen and the dining room level. That role is less about a title than about control of the details that define a room’s identity. In practice, it is authorship expressed through service, plate composition, and the overall tempo of the restaurant.
Signature
Uni Crème Brûlée sits at the center of Greg Lutes’ signature work. The dish pairs a familiar brûlée structure with the depth of uni, a combination that relies on contrast rather than excess. It reads as a dish built on tension—crisp and soft, rich and restrained, direct in flavor but not blunt in intent.
In Their Words “It began in my mother’s kitchen, where I’d cook for her and her friends in our church kitchen.” The line points back to a practical beginning: cooking for a small circle before the frame of professional kitchens entered the picture.
Recognition
MICHELIN Guide California — New Discovery (2021) marks Greg Lutes’ work at 3rd Cousin as newly visible within the California dining field. The recognition lands as part of a working record shaped by training, by named restaurants, and by a pop-up format that let the ideas sharpen before they were fixed into a permanent room.
