    Grégoire Gillard is a Belgian chef who has led Barge in Brussels since 2019. He is the restaurant’s central chef, notes his background at Comme chez Soi in Brussels and Le Louis XV in Monaco, and says Barge received its first Michelin star and Michelin Green Star; the site also states that he was named Gault&Millau’s ‘Jeune Chef de l’année’.
