    i. Biography

    Coming Up

Training at Dublin Institute of Technology gave Harry Quinn the formal base for restaurant work, but the craft was shaped in service. Work experience at Le Mas Candilles in the South of France brought the first exposure to the cadence, standards and pressure of a professional kitchen. Later, time as a chef at Pollen Street Social in London added another set of expectations, sharpening pace and discipline in a different city. Those steps now read into the way Quinn works at Pichet: quick on his feet, attentive to the pass, and comfortable with the demands of a busy dining room.

    Where They Are Now

At Pichet in Dublin, the Head Chef role places Harry Quinn at the centre of the restaurant’s daily output. The brief he gives himself is plain: delicious, exciting, seasonal food, delivered in a positive atmosphere that brings people back. In practice, that means food is only part of the job; the rest is the management of tone, rhythm and consistency across service. The kitchen has to hold flavour and feel at once, and Quinn’s approach sits in that space between what is plated and what is remembered.

The line “I like to play with my food!” points to a kitchen style that leaves room for movement and surprise without losing control of the work. For a Head Chef, that kind of play has to sit inside the discipline of service, seasonality and repetition. At Pichet, the result is a kitchen identity built as much on pace and atmosphere as on the dishes themselves.

In Their Words “My goal at Pichet is to create and cook delicious, exciting, seasonal food within a positive atmosphere which in turn people remember and keep coming back.” “I like to play with my food!”
