Heather Morrison is the owner and hospitality director at Restaurant Olivia in Denver’s Wash Park neighborhood, where she co-founded the pasta-focused restaurant in January 2020 with Ty Leon and Austin Carson. An East Coast transplant who has spent more than 30 years in restaurants, she moved to Colorado in 1995 and worked her way up through dive bars and notable Denver establishments before opening Olivia., she received the MICHELIN Guide Colorado Service Award for her hospitality work at Olivia.
