Heinz O. Wehmann has held the kitchen at Landhaus Scherrer in Hamburg since 1981, and that kind of continuity is the point. The line from the 1980 Landhaus Scherrer entry to chef and managing-director duties is unusually direct: a career built on repetition, responsibility and the accumulation of trust over time, rather than turnover or reinvention.
The Climb
Training at Ostwestfalen set the base, but the early formation of the craft took shape in Hamburg’s hotel and restaurant trade. At Hotel Atlantic in Hamburg, Wehmann worked as Mitarbeiter from 1975–1980, then moved into the position of Stellvertretender Head Chef until 1980. Those years show the usual ladder of kitchen work: support, then delegated authority, with the pace and discipline of a large house marking the progress. The decisive step came in 1981, when Wehmann moved to Landhaus Scherrer in Hamburg as Head Chef und Geschäftsführer. The title joins the kitchen and the office in one role, which is where his run at the restaurant has remained defined ever since. From 1982, he also became Mitinhaber at Landhaus Scherrer in Hamburg, tying the work of the pass to the responsibilities of ownership and fixing his name to the house in more than one register.
Today
Since 1981, the head-chef role at Landhaus Scherrer has been his frame of reference, and longevity itself has become part of the craft. The job at that level is not made lighter by time, but it does become familiar: service, oversight and responsibility folded into a working rhythm that can sound almost plain when described. Heinz O.
