At Ecole Supérieur d'œnologie de viticulture Changins, Henri Valloton trained in the technical base that underpins his work in the cellar and among the vines. The schooling matters here because it gives structure to a practice built on precision, craft, and a measured reading of wine.

The Work Today

The vineyard language is exact, and the detail points to a style that stays close to the material itself. “For my Arvine, I remove residual herbicides and aromatic herbs such as thyme and hyssop grow on the terraces.” That approach leaves the terraces active in scent and texture as well as fruit. Another variety remains part of the same line of attention: “Sauvignon Blanc also interests me a lot.” The comment is brief, but it shows a producer whose focus can move when another grape offers its own case.

Signature

Henri Valloton’s signature wines include Petite Arvine Fully Grand Cru, Ermitage surmaturé Grain Noble ConfidenCiel, Effigie blanche, and Dôle AOC Valais. The range moves between structure and richness, between varietal clarity and the more deliberate character of élevage, with each bottle tied to place and to the standards that shape it.

The line shows a cellar practice that does not stop at one threshold, but works across several layers of identity and discipline. In that structure, the Fully cellar is more than a production site; it extends the proprietor’s address begun in 1989, with vineyard care, cellar practice, and bottle-by-bottle refinement kept tightly linked.
