i. Biography
Hiroto Nakamura founded Afuri in Tokyo in 2003 around a ramen style that favors restraint, clarity, and brightness over weight. The house he built is known for light, citrus-infused broths made from natural, high-quality ingredients without artificial additives, which gives the bowls a clean-edged purity. Yuzu sits at the center of that identity, and Nakamura put it plainly: “We make our signature ramen with yuzu, a small yellow citrus fruit native to Asia.” Gyoza also belongs in the lineup, serving as a familiar companion to the restaurant’s more distinctive bowls.
The Climb
The line of work here runs through corporate stewardship and restaurant authorship: Hiroto Nakamura is representative director and chief executive officer of AFURI Inc. (since 1995), and later became the founder of Afuri (since 2003). Those dates mark two linked forms of control, one at the company level and one in the Tokyo restaurant that bears his approach most clearly. Read together, the roles show a long practice of holding a concept steady while giving it a fixed point in the city.
Today
The timeline starts in 1995 and shifts again in 2003, with each date anchoring a different layer of the same operation. One role carries the company forward; the other defines the restaurant’s point of view in Tokyo.
Signature
Yuzu shio ramen is the signature dish associated with Hiroto Nakamura. The bowl is recognizable for what it leaves in and leaves out: citrus for lift, clarity in the broth, and a measured hand rather than excess. It reads as a precise expression of the Afuri approach, with the ingredient balance doing the work.
In Their Words “We're particular about all of our ingredients, but there's one in particular that makes Afuri ramen special.” “We make our signature ramen with yuzu, a small yellow citrus fruit native to Asia.”
Recognition
Ingredient discipline is the recognition here. Nakamura has described the yuzu use directly: “We splash it in our fresh chicken broth and we garnish it on top, too.” That method keeps the citrus present at more than one point in the bowl, using it as a defining element rather than an accent. The result is a ramen built around brightness and control, with the broth left clear enough to show its own structure beneath the yuzu.
