i. Biography
Hyacinthe Lescoët is a French bartender and co-founder and co-owner of The Cambridge Public House. After studying advertising, he worked in London at Six Storeys and 69 Colebrooke Row and in Paris at Mary Celeste and Les Grands Verres before co-founding The Cambridge in January 2019. He and Hugo Gallou now lead The Cambridge and Little Red Door with a focus on hospitality, team management, sustainability and transparent ESG reporting.
