Alejandra Flores

Alejandra Flores is the co-founder and co-director of Quintonil, the contemporary Mexican restaurant in Mexico City founded in 2012 with chef Jorge Vallejo. Quintonil’s official site says she is the project’s driving force on the dining-room and operations side, and notes that she previously served as director of operations and commercial director for the Enrique Olvera Group. She studied restaurant management at CESSA and earned a master’s degree in hospitality management with a marketing specialization at Les Roches in Switzerland.
